College Food - Homemade Hot Pockets
I always found it hard for my friends to make food in their dorm because they don’t have a kitchen facility. So my wife found this little trick using a mini waffle make from Dash. Using your favorite canned biscuit or croissant product, you can make simple, quick and fun hot pockets.
Hot Pocket
Ingredients
1 can biscuits or croissants
1 package pepperoni
1 package of slice cheddar
1 package of sliced mozzarella
1 can of non-stick cooking spray
1/4 cup of flour
Preparation time (15 minutes)
Lay down your cutting board and sprinkle with a teaspoon of flour to keep the biscuit form sticking.

Take one of the biscuits and split it in half by pulling it apart gently. Biscuits are a layered dough, so they will come apart pretty easily.

Place one half of the biscuit onto the cutting the board and sprinkle flour on top.

Start rolling the biscuit in all directions

Finish rolling the biscuit when the dough is approximately 5 inches in diameter. Proceed to roll out all the halved biscuits in the same manner.

Cut your sliced cheese into 4 inch round pieces

Place one rolled out half of a biscuit onto the cutting board and place your 4 inch round mozzarella cheese in the middle of the rolled biscuit dough
Adding the mozzarella cheese slice on top of the bottom dough. Make sure to place cheese in the center of the dough.

Place the scrap cheese on top of the pepperoni

Place the prepped cheddar cheese on top of the pepperoni and cheese scraps. Take your hand and gently press down on top of the cheddar cheese in order to compress the filling.

Place another half of rolled biscuit dough on top

Crimp the edges with your fingers
Folding the dough edges together to make a sealed pocket
Using fork, further crimp the edges. Poke holes in the top and bottom to let steam out.

Spray non-stick cooking spray onto heated mini waffle maker. Place one of the finished hot pockets onto the machine and close it. The handle end will be open a tiny bit. Let the hot pocket cook for 3 to 5 minutes.

Repeat creating the hot pockets until they are all filled and cook each one.
