Keeping vegetables and fruit fresh
When it comes to hard fruits or root vegetables, as soon as you cut them the freshness clock starts ticking. Here is a pretty simple trick that will keep them fresh as well as allow you to do preparation ahead of time.
Ingredients
5 potatoes (substitute any hard fruit or root vegetable like apples or potatoes)
3 cups of water
Preparation
Several things to remember: it is best not to store different types of fruits and vegetables together. Also, do not season the water. Fill a medium sized mixing bowl with cold water.
Begin chopping your fruit or vegetables. In this example, I am using potatoes. Add the chopped potatoes to the bowl.
Make sure all pieces are covered with water.
After all the fruits or vegetables, potatoes for this example, are finished being prepped, put a top on the bowl.
These potatoes will keep in the fridge for several days and stay fresh. When it is time to cook them, simply pour them into a strainer to drain the water off. Retain the water if you need it to make a stock.
