Dry Rubbed Herb Crusted Chicken
Chicken is really a great canvas for all sorts of flavors. Flavors can range from barbeque to spicy. Chicken preparation can range from grilled to fried. Today we are going to make a dry rub made of herbs and spread it on chicken breasts. We will roast the chicken breasts at 400 degrees with scalloped potatoes and carrots. One point about dry rubs in general: essentially dry rubs can be made of your favorite flavors. Dry rubs provide flavor and tenderize the meat at the same time, very similar to a marinade. While there are dry rubs with specific application in mind, generally, they can be applied to any meat.
Ingredients
4 chicken breasts or thighs. Bone in will provide more flavor
3 tablespoons of your favorite Italian herb mix
1/4 teaspoon of onion powder
1/4 teaspoon of garlic powder
1/4 teaspoon of red pepper flakes (optional)
1/2 teaspoon of salt
1/2 teaspoon of pepper
2 tablespoons of olive oil
Preparation
In mixing bowl, add Italian seasoning
Add onion powder to the mixing bowl
Add garlic powder to the mixing bowl
Add red pepper flakes to the mixing bowl. Skip this step if you are not using them in the rub.
Add salt to the mixing bowl
Add pepper to the mixing bowl
With a whisk or a fork/spoon, mix all of the ingredients thoroughly
Take the olive oil and coat both sides of all the chicken pieces. Make sure that all pieces are completely covered.
Sprinkle the dry mixture on both sides of all the pieces.
After coating both sides, let them sit for several minutes. While the chicken is resting, preheat your oven to 400 and spray a baking sheet pan with non-stick cooking spray.
Cook time for boneless chicken is 15 to 20 minutes. Bone-in chicken cook time ranges from 30 to 40 minutes.
