What is the best knife for me?

I have had several people ask me “What knives do you use?“ So I have decided to write a tip on how to figure out what knife is best for you. There are several criteria to consider when trying to find a knife. I liken buying a knife to buying a wine in the sense you like what you like regardless of price.

First, budget, how much do you want to spend? When it comes to knives, you can spend very little or quite a bit for a single knife. I would suggest that your budget should be based on how much you plan on using your knife. Typically, I am using my knife a minimum of once a day.

Secondly, comfort, how does the knife feel in my hand? To me this has to do with handle type and size as well as weight. I have pretty large hands, so a large handle fits in my hands nicely. I personally like a knife that feels comfortable in my hand because the hilt can cut through almost anything.

Thirdly, location, where was the knife made and why does this matter? There is a direct correlation to the steel used and forging techniques. The higher quality of steel and forging leads to knives holding an edge much longer than ones that do not have high quality steel.

Lastly, individual vs set, should I buy single knives or buy a set? This again depends on your situation. If you don’t own a quality knife set currently, my suggestion would be to buy a set first because you can buy a nice starter set for what it costs to buy a singular higher quality knife. If you currently own a starter set, determine why you want to buy a new knife. Is it dull or do you just want a new one? These basic sets come with a honing stick that can help set the edge and restore its sharpness. If this doesn’t work, then take them to a knife sharpening professional to restore the knife’s edge.

Evaluating a knife or set really comes down to effort. You can go to a store with knives and hold the knives and see which ones feel good in your hands. When you find one, buy it.
