Italian Charity Event - Delivery Day

First, my team and I want to thank everyone who purchased a combination meal in support of the event. It was a resounding success. As I had mentioned before, we met our goal of 250 orders. This was our first event that was solely designated from the beginning as a takeout event. With this post I want to show you how we were able to accomplish delivering all of the frozen food.

First, we had to gather all of the food from various freezers and facilities from around the west-end of Richmond.

Frozen food in the freezer

Here is the food in the walk-in refrigerator waiting to be staged into orders and combinations.

Black containers are mushrooms and blue containers are full of pints of sauce

More staged food in the walk-in fridge

More sauce in the blue tub and delivery bags with cookies

Here is a little more food awaiting staging.

Pasta and more sauce

All of the frozen food was staged into the middle of eight tables. Each table was responsible for a combination. On each table we listed what goes in that particular combination so the person assembling the combination could always know what it contains. Plus, on each combination sheet, we kept track of how many we made along with the total number ordered.

When a customer pulls up, we had someone ask for the name on the order, then we confirmed what they ordered. Then they would tell the runner what combinations to get and they would go to each needed combination table and return to the outside delivery table for quality control. The delivery desk confirms the name, combinations, as well as making sure the bags are packed correctly.

Thank you for your support!

Bon Appetit!
